Sacks of potatoes are being stored in downstairs storage room directly on the floor, rather than 6 inches above as required. In the salad bain-marie, the internal temperature of time/temperature-control-for-safety cakes, cut lettuce, and tartar sauce measured 45-47 F; discarded. Two wooden pizza paddles have splintered edges, and wood cedar planks used to cook salmon have deep knife cuts; must be corrected so that food contact surfaces are smooth and easily cleanable.
