BARBECUE WITH CHOCOLATE
Add some sweetness to your summer cookouts with this recipe, courtesy of Charlie Gipe, executive chef of the Hershey Entertainment Complex:
Hershey’s Chocolate Barbecue Sauce
1/4 cup chopped garlic
2 cups diced onion
1/2 cup olive oil
Juice of 4 lemons
2 tablespoons salt
3 tablespoons black pepper
2 tablespoons paprika
2 tablespoons hot-pepper sauce
8 cups ketchup
1 cup cider vinegar
4 cups chocolate syrup
In a 5-quart saucepan, cook chopped garlic, diced onion and olive oil over medium heat until onions are tender. Stir in lemon juice, salt, black pepper, paprika and hot-pepper sauce. Simmer for 10 minutes.
Stir in ketchup, cider vinegar and chocolate syrup. Simmer for 15 minutes.
Hold on low heat until ready to serve, or chill in refrigerator for service at a later time. Reheat on a low heat setting.
